Lentil Farro Salad with Mushrooms and Vegetables

This healthy Lentil Farro Salad is packed with flavors. Made with whole red lentils, farro, Nameko mushrooms, pitted black Leccino olives, herbs and vegetables with a simple balsamic vinegar dressing. A perfect vegetarian dish for lunch and dinner.

Ingredients

  • 3 cups whole red lentils, cooked
  • 2 cups ferro, cooked
  • 2 cups Nameko mushrooms, canned
  • 1½ cup pitted black Leccino olives
  • 2 cups shredded carrots
  • 1½ cup soy bean sprouts
  • 1 cup fresh parsley, chopped
  • 2 spring onions, chopped
  • 1 red onion, diced
  • 1 clove garlic, pressed
  • 1 tablespoon chia seeds
  • 1 tablespoon sesame seeds
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic vinegar
  • Himalayan pink salt and ground black pepper

Steps

  1. Add all ingredients to a large bowl and mix well.
  2. Serve alone or with a piece of bread.
