Mix Mushroom Fried Rice with Italian Sweet Peppers
A delicious Vegetarian dish, this mushroom fried rice recipe is easy and quick to make. I used a package of frozen mix mushrooms for this recipe but you can also use any fresh mushroom you prefer.
Ingredients (3 servings)
- 2½ cups of frozen mix mushrooms (Champignon, Nameko, Bay Bolete, Shiitake, Oyster and Penny Bun 'aka' Porcini Mushrooms)
- 3 Italian sweet peppers in red, orange and yellow - sliced in circles
- ½ leek - sliced in circles
- 2 cups Basmati rice
- 1 teaspoon garlic powder
- ½ teaspoon cayenne pepper
- ½ teaspoon chili flakes (crushed red pepper)
- ½ cup parsley, finely chopped
- 2 tablespoons soy sauce
- 3 tablespoons extra virgin olive oil
- Himalayan pink salt & fresh ground black pepper for seasoning
Steps
- Heat up a frying pan or a wok with extra virgin olive oil on medium/high heat and add the frozen mushrooms. Season with salt and ground black pepper and cook until the water from mushrooms is almost evaporated. Add sliced leeks and sweet peppers, garlic powder, cayenne pepper, chili flakes, a dash of ground black pepper, salt, olive oil and stir fry for about 1 minute.
- Rinse off the dust and starch of 2 cups of basmati rice in a colander with cold running water for about a minute and add it to a pot of boiling water with some added salt. Cook for about 10 minutes till rice is tender, then strain and add it to the mushrooms and peppers in the pan and mix.
- Add a bunch of finely chopped parsley, season with a dash of ground black pepper and garlic powder, pour some extra virgin olive oil and soy sauce. Mix well and serve.
