Red Cabbage Tuna Salad with Blueberries

 —This quick and healthy red cabbage blueberries tuna salad is packed with nutritional ingredients and superfoods. A perfect summer dish for low-carb, ketogenic, gluten-free and paleo diets.

Ingredients (serves 3)

  • 1 small red cabbage head, finely shredded
  • 1 cup canned tuna, drained
  • 1 cup black olives, pitted and cut in half
  • 1 cup blueberries
  • 2 garlic cloves, peeled and pressed
  • Large bunch of parsley, finely chopped
  • 2 tablespoons ground flaxseed
  • 2 tablespoons extra virgin olive oil
  • Juice of ½ lemon
  • Himalayan pink salt and freshly ground black pepper

Steps

  1. Put the shredded red cabbage in a large mixing bowl and add drained tuna, pitted black olives, pressed garlic, blueberries, chopped parsley, ground flaxseed, extra virgin olive oil and lemon juice.
  2. Season with salt and ground black pepper.
  3. Mix, taste and serve.
