Rustic Tuna Pasta with Cherry Tomatoes
A simple healthy Mediterranean pasta dish. This quick yet delicious rustic tuna pasta with cherry tomatoes, black olives and canned tuna is super easy to make and ready in 10 minutes. If you love healthy Mediterranean flavors, you will adore this one.
Ingredients (3 Servings)
- 250 grams pasta "Mezzo Penne Rigate" (also known as tubular pasta)
- 3 cups (about 30) cherry tomatoes, halved (cut in half)
- 1½ cup pitted black olives
- 1 can tuna in olive oil
- 2 garlic cloves, pressed
- ½ teaspoon chili flakes (crushed red pepper)
- Bunch of parsley, roughly chopped
- 2 tablespoons extra virgin olive oil
- Himalayan pink salt for pasta water and seasoning
- Ground black pepper for seasoning
Steps
- Boil a large pot of water, once boiling add salt and pasta. Undercook your pasta in boiling water by 2 minutes less than recommended cooking time on the packaging for a perfect "al dente" pasta.
- Heat up a frying pan with extra virgin olive oil on medium/high heat, add garlic, chili flakes and tomatoes. Season with salt and black pepper and sauté on high heat for about 3 minutes, then add black olives and tuna, mix well and turn off the heat.
- Strain pasta and add it to the pan with parsley and mix well.
- Season with a salt and black pepper to taste and a sprinkle of extra virgin olive oil. Mix and serve.
