Quick Vegetarian Meatballs

— The meatballs of the day that are, in fact, not meatballs. These vegetarian meatballs are incredibly easy and super versatile! Packed with healthy plant-based ingredients, they are perfect weeknight-dinner-friendly.

Ingredients

  • 3 cups Carnaroli rice, cooked al dente
  • 1 cup barley, cooked al dente
  • 2 eggs, beaten
  • ½ cup vegetable stock
  • 1 cup ground flaxseed
  • 1 medium onion, finely chopped
  • 2 cloves garlic, pressed
  • 1 spring onion, chopped
  • 1 tablespoon dried dill
  • ½ teaspoon turmeric
  • A pinch of saffron (optional)
  • Bunch of parsley, roughly chopped
  • Salt and black pepper for seasoning
  • 2 tablespoons extra virgin olive oil

Steps

  1. Transfer all ingredients to a large mixing bowl and stir until everything is incorporated. Roll into small balls.
  2. Bake for 20 minutes. Serve with yummy sauces, salads, or freeze for later!
