Quick Vegetarian Meatballs
— The meatballs of the day that are, in fact, not meatballs. These vegetarian meatballs are incredibly easy and super versatile! Packed with healthy plant-based ingredients, they are perfect weeknight-dinner-friendly.
Ingredients
- 3 cups Carnaroli rice, cooked al dente
- 1 cup barley, cooked al dente
- 2 eggs, beaten
- ½ cup vegetable stock
- 1 cup ground flaxseed
- 1 medium onion, finely chopped
- 2 cloves garlic, pressed
- 1 spring onion, chopped
- 1 tablespoon dried dill
- ½ teaspoon turmeric
- A pinch of saffron (optional)
- Bunch of parsley, roughly chopped
- Salt and black pepper for seasoning
- 2 tablespoons extra virgin olive oil
Steps
- Transfer all ingredients to a large mixing bowl and stir until everything is incorporated. Roll into small balls.
- Bake for 20 minutes. Serve with yummy sauces, salads, or freeze for later!
